5th Generation Chocolate Pie
Tomorrow is Pi Day, so I wanted to share a special pie recipe that has been in my family for at least five generations. The picture at the bottom is actually my great-grandmother's (who I am named after. fun fact, my first name is Doris) handwriting. The recipe is basically bullet points, so you know she must've known it by heart. Her daughter, my grandmother, (also known as Gan Gan) has made this chocolate pie for dessert my whole life. Are there any foods you have distinct memories of? I've grown up with this pie at every holiday and most Sunday lunches, so I wanted to share its sweetness with y'all for 3.14! Enjoy!
INGREDIENTS:
Chocolate Pie:
1 Cup of Sugar
1 Tablespoon Self-Rising Flour
3 Large Egg Yolks (remove whites, and if you wish to make a meringue, set aside)
3 Tablespoons of Unsweetened Cocoa Powder
2 Cups Milk
1 Teaspoon Vanilla
ΒΌ Stick of Butter
1 Fully Baked Pie Crust (you can make your own crust or buy one)
Whipped Cream Topping:
1 Cup of Heavy Whipping Cream
1 Tablespoon of Sugar
DIRECTIONS:
Bake pie crust according to directions and set aside.
In a large mixing bowl, combine sugar, egg yolks (be sure to remove whites), Cocoa, Flour, and Milk. Mix until fully combined (no lumps left!).
Pour chocolate mixture into a medium sauce pan and bring to a boil (whisking continually). Once it reaches a boil, add butter and vanilla. Continue to stir until this mixture becomes thick.
Remove from heat, but still stirring until fully combined and thick.
Pour mixture into pie crust and let the pie set up for at least two hours. You can refrigerate.
While the pie rests, make your meringue, or whipping cream.
In a mixer (standing or handheld) pour in heavy whipping cream and sugar. Beat on high until stiff peaks form. Refrigerate until you are ready to top your pie.
