Summer Salad
We started making this little summer salad mix a few years ago and have been hooked since. When fresh vegetables hit the Farmer's Market I am all over this as a side item. I made a large portion up last night. Snaps from dinner and the recipe are below. Happy Summer!
INGREDIENTS:
2 Medium to Small Cucumbers
2 Medium Tomatoes
½ Of a Purple Onion
2 Regular sized Green Bell Peppers
2 Ears of Corn
¼ Cup of Goat Cheese
½ Cup Brianna’s Homestyle Italian Dressing
Cracked Pepper to taste
INSTRUCTIONS:
1. Wash and slice all vegetables except corn.
2. Shuck and wash ears of corn. Remove all silk from corn, then hold corn base down and cut off the kernels into your preferred serving bowl.
3. Combine other sliced vegetables with corn. Cover vegetable mixture with Brianna’s Homestyle Italian Dressing and add desired amount of cracked pepper. Mix well and refrigerate until you are ready to serve.
4. Once you are ready to serve toss the salad once more and then top the salad with ¼ cup of crumbled goat cheese. Enjoy!
