Watermelon Citrus Salad
I went to our local Farmer's Market last weekend and purchased some wonderful produce. One of my favorite booths had watermelons, and I could not resist. Let me tell you one thing I've learned about watermelons, they are so deceiving. There is a lot more melon in there than you think...I used 5 tupperware containers when I sliced it up! Needless to say, I had to call in the troops, so we had some family over for a "Summer Supper". I served lots of fresh dishes but this was one of my husbands favorites from the night. Enjoy!
INGREDIENTS:
- 4 Cups Watermelon, cubed 
- ½ Cup of Ramona cheese 
- Handful of Chopped Basil 
- 3-1/2 tablespoons apple cider vinegar 
- 2 tablespoons fresh squeezed orange juice 
- 2-1/2 teaspoons Dijon mustard 
- 2 tablespoons honey 
- 2/3 cup light olive oil 
- Salt and freshly ground black pepper to taste 
INSTRUCTIONS:
- Cut the watermelon up and remove the seeds. (if needed) 
- Cut into small cubes and place in a large bowl. 
- Chop the fresh basil into small pieces and sprinkle over the salad. 
- In a small bowl, combine the liquid ingredients. (see below) 
- Pour liquid mixture over the watermelon and gently toss to cover evenly. 
- Sprinkle top of salad with shaved Romano cheese. 
- Serve immediately! 
Liquid Mixture, Combine ingredients below and follow step 5 above.
