Marinated Cucumbers

One of my favorite things about Summertime is gardening. I started ours with seeds this year, so our veggies will show up soon. Lucky for me, I have plenty of cucumbers to enjoy this week, from my Dad and our neighbor! I spent the afternoon pickling and marinating. I mixed up a little concoction for some delicious fresh marinated cucumbers. Enjoy!

Marinated Cucumbers

ingredients:

Marinated Cucumbers
  • 3 Medium- Large Cucumbers, Thinly Sliced
  • 1 Cup of Red Onion, Thinly Sliced
  • 1/4 Cup of Red Wine Vinegar 
  • 1/4 Cup of White Distilled Vinegar
  • 1/4 Cup of Balsamic Vinegar 
  • 3 Tablespoons of Extra Virgin Olive Oil
  • 2 Tablespoons of Honey
  • Salt and Pepper (to taste)

How to cook Marinated Cucumbers

Marinated Cucumbers
  1. Begin by slicing Cucumbers and Onion, Set aside. 
  2. In a medium sized mixing bowl, combine all liquid ingredients. Whisk well until fully combined. 
  3. Toss Cucumbers and Onion Slices in liquid mixture.
  4. Top with Salt and Pepper, toss again. 
  5. Chill for 1 hour, and serve.
