Marinated Cucumbers
One of my favorite things about Summertime is gardening. I started ours with seeds this year, so our veggies will show up soon. Lucky for me, I have plenty of cucumbers to enjoy this week, from my Dad and our neighbor! I spent the afternoon pickling and marinating. I mixed up a little concoction for some delicious fresh marinated cucumbers. Enjoy!
Marinated Cucumbers
ingredients:
Marinated Cucumbers
- 3 Medium- Large Cucumbers, Thinly Sliced
- 1 Cup of Red Onion, Thinly Sliced
- 1/4 Cup of Red Wine Vinegar
- 1/4 Cup of White Distilled Vinegar
- 1/4 Cup of Balsamic Vinegar
- 3 Tablespoons of Extra Virgin Olive Oil
- 2 Tablespoons of Honey
- Salt and Pepper (to taste)

How to cook Marinated Cucumbers
Marinated Cucumbers
- Begin by slicing Cucumbers and Onion, Set aside.
- In a medium sized mixing bowl, combine all liquid ingredients. Whisk well until fully combined.
- Toss Cucumbers and Onion Slices in liquid mixture.
- Top with Salt and Pepper, toss again.
- Chill for 1 hour, and serve.
