A friend of mine owns a Greek Restaurant with delicious, fresh ingredients- that I love. I’ve been twisting his arm to add Greek Nachos to the menu… but until he does, I’ve put together an easy and addicting combination that you will love. These are the perfect summer meal or appetizer, that will please any crowd. Enjoy!

Ingredients:

  • 2 Chicken Breasts or Rotisserie Chicken, Shredded

  • 1.5 Cup Cucumber Quartered 

  • 1 Cup Tomatoes Diced 

  • 1/2 Cup Purple Onion Chopped

  • 1 Teaspoon Dried Parsley 

  • 1/2 Teaspoon Oregano 

  • 1/2 Teaspoon Garlic Powder 

  • 1/4 Teaspoon Cinnamon 

  • 1/2 Teaspoon Thyme 

  • 1/2 Teaspoon Onion Powder 

  • 1/4 Teaspoon Salt 

  • 1.5 Tablespoons Extra Virgin Olive Oil

Instructions:

  1. Cook chicken thoroughly and shred.

  2. While chicken cooks, Preheat oven to 375 degrees - Place flatbreads on lined sheet pan for 5 minutes- Brush with olive oil is desired 

  3. Combine spices and shredded chicken and evoo into a medium mixing bowl. Mix well. 

  4. Prep tomatoes, cucumbers and onion

  5. Begin assembling nachos -
