Pepper Jelly Deviled Eggs

When everything started to become real with the covid quarantine, I thought to myself and prayed that surely this would resolve by Easter. Sadly, it isn’t looking that way, and I am afraid I won’t be going on for Easter, for the first time in my life. With that said, Easter has always been one of my most favorite holidays to observe. This time of year is so joyful and calls for much celebration of our Risen Savior. Though there is so much unknown right now and I may not celebrate Easter at home, I will still choose joy for this special day. I’ve developed some delicious Pepper Jelly Deviled Eggs to get your Easter celebration started. During this unprecedented time, we are reminded how very human we are, and that we are not in control. This year, I will be eating a delicious Pepper Jelly Deviled Egg while reflecting on one of my favorite Easter hymns below.

Pepper Jelly Deviled Eggs 

Ingredients:

  • 6 Hard Boiled Eggs 

  • 2 Tablespoons Mayonnaise 

  • 2 Tablespoons Red Pepper Jelly 

  • 1/2 Teaspoon Salt 

  • 1/2 Teaspoon Pepper

  • 2 Drops All Natural Red Dye (optional)

  • 3 Sprigs of Dill 

  • 3 Pieces of Crispy Bacon

  • Plastic Bag or Piping Bag

Instructions:

  1. Boil eggs for 12-14 minutes, then let sit until cool. 

  2. Crack Eggs and fully remove shells, then slice vertically. Remove yolks with a small spoon, scoop them out.

  3. In a medium mixing bowl, combine the yolks, Mayonnaise, Red Pepper Jelly, Salt and Peppe. Mix well. 

  4. Once combined, add in 2-3 drops of all natural food color. This will give the eggs a red/coral color like pepper jelly. Mix well 

  5. Spoon the mixture into a piping bag or homemade one out of a ziplock. You will then pipe the filling into the Boiled Egg White. 

  6. Top with Dill and Bacon Crumbles. Refrigerate for 1 hour and enjoy!
