Mini Lemon Pound Cakes

If you’re still looking for the perfect Easter dessert… look no further than these little babies! With everyone staying home and the traditional gathering being altered, personal pound cakes are the answer. These little miniature lemon pound cakes are just as delicious as they are adorable. enjoy!

Mini Lemon Pound Cakes 

Ingredients:

  • 3 sticks of Unsalted Butter Softened (and a little extra to grease the pan)

  • 1 Cup Cream Cheese

  • 2 Cups of Sugar 

  • 2 Teaspoons of Vanilla 

  • 1/3 Cup of Lemon Juice

  • 6 Eggs 

  • 3 Cups of Flour (and a little extra to flour the pan)

  • 1 Teaspoon of Baking Powder 

  • 1 Teaspoon of Salt 

  • Preheat oven to 350 degrees. 

Instructions:

  1. In a large mixing bowl, sift together the Flour, Baking Powder and Salt. Set aside.

  2. Cream together the Butter and Cream Cheese. Then add in the Sugar, beating well until mixed.

  3. Reduce speed, and add in your Eggs, one at a time. 

  4. Once the Eggs are combined, you will slowly add in your Flour Mixture. 

  5. Lastly, you will add in your Lemon Juice and Vanilla. Mix well. 

  6. Grease and lightly Flour your Mini Pound Cake Pan or Large Pound Cake Pan. Pour your mixture into the pan. 

  7. Minis: Bake for 35-45 minutes or until golden brown and a toothpick pulls clean.

  8. Regular: Bake for 1 hour or until golden brown and a toothpick pulls clean.
