Springtime Salad

We picked up a big batch of strawberries while visiting family last weekend, and I’ve been tossing the best salad with them ever since. We’ve had this combination of sweet, spicy and savory a few times this week, and I couldn’t wait to share it with y’all. Add this into your side-dish rotation, because it is delicious!

INGREDIENTS:

  • Spring Salad mix

  • Arugula Mix

  • 1-2 Ears of Fresh Corn (raw and kernels cut off the cob)

  • 2 Cups of Strawberries (sliced quartered)

  • 2 Cups of Cherry Tomatoes

  • 1/2 Cup of Sweet and Spicy Pecans (I purchased these from Trader Joe’s, but if you can’t find them, you can make your own.)

  • Crumbled Goat Cheese (amount to taste)

  • Cracked Pepper

  • Serve with a vinaigrette of your choice. We used an Italian vinaigrette from Trader Joe’s!

INSTRUCTIONS:

  1. Prep ingredients according to notes above.

  2. Begin assembling the salad individually, or in a large serving bowl.

  3. Lettuce mixture, Corn off the Cob, Strawberries, Cherry Tomatoes, Pecans, Goat Cheese, and Cracked Pepper.

  4. Layer in the dressing, toss and serve. Enjoy!
