Pimento Cheese and Pecan Bites

Is there anything more Southern than combining pecans and pimento cheese? I’ve been in the kitchen putting together delicious combinations a lot lately, and I must admit this is one of my favorites. These make for a great appetizer, hostess gift, or even an indulgent snack! Add these to your summer to-do list. Enjoy!

Pimento Cheese and Pecan Bites

Ingredients:

  • 8 Tablespoons Salted Butter (Room Temperature)

  • 1 Cup Pimento Cheese (pre-packed is good  or you can make your own)

  • 1 Cup Shredded Sharp Cheddar 

  • 2 Cups All Purpose Flour (Substitute Arrowhead Mills Gluten Free Flour)

  • 1 Cup Chopped Pecans

  • 1 Teaspoon Garlic Powder

  • 1 Tablespoon Hot Sauce

Instructions:

  1. Cream together the Butter, Pimento Cheese, and Sharp Cheddar Cheese, mix well. 

  2. Add in Garlic Powder and Hot Sauce.

  3. Next you will slowly add in the flour option of your choice, continually mixing as you add.

  4. Once fully combined, add in finely chopped Pecans.

  5. Shape into a log and wrap with parchment paper. It will yield two slice and back logs.

  6. Refrigerate for 4 hours.

  7. Preheat oven to 350 degrees. Slice into 1/2 inch thick rounds and top with a single pecan.

  8. Place on lined and greased sheet pan. Bake for 20 minutes or until slightly brown and crispy.
