Melon and Tomato Medley

Nothing says summertime like melon and fresh tomatoes. These are two of my most favorites summer treats, so i’ve combined them to make a sweet and savory salad mixture. You could treat this as a starter, side-dish, or dessert! The options are endless, because it is so easy and delicious! Enjoy!

Ingredients:

  • 3 Cups Honey Dew (heaping)

  • 3 Cups Cantaloupe (heaping)

  • 4 Cups Watermelon (heaping)

  • 3 Cups Cherry or Grape Tomato Varieties (halved both ways)

  • 1/4 Cup White Wine Vinegar 

  • 1/4 Cup Balsamic Vinegar 

  • 1 Tablespoon Wild-flora or Clover Honey

  • 1 Tablespoon Lime Zest (evenly distributed)

  • 2 Tablespoons Minced Basil Leaves

  • 2 Tablespoons Olive Oil

  • Sea Salt (to taste)

  • Cracked Pepper (to taste)

Instructions:

  1. Begin by cutting your melons and cubing your pieces.

  2. Place melon measurements into an extra large mixing bowl.

  3. Next, you will slice your tomatoes and add them to the bowl.

  4. In a separate mixing bowl, or a mason jar, combine, Honey, Balsamic Vinegar and White Wine Vinegar. Whisk or shake well until fully combined.

  5. Pour Vinegar mixture evenly over the bowl of melon and tomatoes. Now, toss mixture with your hands or a large spoon. Be careful not to bruise the melon.

  6. Next, you will evenly distribute your lime zest and minced basil. Toss again to make sure it is combined.

  7. Transfer the mixture into your serving dish.

  8. Top with Sea Salt, Cracked Pepper, Olive Oil, and additional Honey to taste. Serve immediately!

  9. if you wish to serve later, wait to add Sea Salt, Cracked Pepper, Olive Oil, and additional Honey.
