Melon and Tomato Medley
Nothing says summertime like melon and fresh tomatoes. These are two of my most favorites summer treats, so i’ve combined them to make a sweet and savory salad mixture. You could treat this as a starter, side-dish, or dessert! The options are endless, because it is so easy and delicious! Enjoy!
Ingredients:
- 3 Cups Honey Dew (heaping) 
- 3 Cups Cantaloupe (heaping) 
- 4 Cups Watermelon (heaping) 
- 3 Cups Cherry or Grape Tomato Varieties (halved both ways) 
- 1/4 Cup White Wine Vinegar 
- 1/4 Cup Balsamic Vinegar 
- 1 Tablespoon Wild-flora or Clover Honey 
- 1 Tablespoon Lime Zest (evenly distributed) 
- 2 Tablespoons Minced Basil Leaves 
- 2 Tablespoons Olive Oil 
- Sea Salt (to taste) 
- Cracked Pepper (to taste) 
Instructions:
- Begin by cutting your melons and cubing your pieces. 
- Place melon measurements into an extra large mixing bowl. 
- Next, you will slice your tomatoes and add them to the bowl. 
- In a separate mixing bowl, or a mason jar, combine, Honey, Balsamic Vinegar and White Wine Vinegar. Whisk or shake well until fully combined. 
- Pour Vinegar mixture evenly over the bowl of melon and tomatoes. Now, toss mixture with your hands or a large spoon. Be careful not to bruise the melon. 
- Next, you will evenly distribute your lime zest and minced basil. Toss again to make sure it is combined. 
- Transfer the mixture into your serving dish. 
- Top with Sea Salt, Cracked Pepper, Olive Oil, and additional Honey to taste. Serve immediately! 
- if you wish to serve later, wait to add Sea Salt, Cracked Pepper, Olive Oil, and additional Honey.
