Roasted Tomatoes and Burrata
Summertime living with a side of roasted tomatoes and burrata. If you haven’t tried it… just wait, your life is about to change for the tastebud better. I have always loved anything with tomatoes and garlic, but when you add fresh burrata (and maybe a glass of wine) you’ll be in heaven! Add this to your summertime rotation and thank me later! Enjoy!
Roasted Tomatoes and Burrata
Ingredients:
Crusty Bread for Dipping
1 Pound Cherry or Grape Tomato Mix
2-3 Cloves Garlic (roughly chopped)
3 Tablespoons Extra Virgin Olive Oil (2 for roasting and 1 for mixture)
1/2 Teaspoon Sea Salt
1/2 Teaspoon Cracked Pepper
1/2 Teaspoon Oregano
1/3 Cup Fresh Chopped Basil
8 Oz Fresh Burrata
Sea Salt and Pepper (to taste)
Instructions:
Preheat oven to 400 degrees.
On a large lined sheet pan, spread Tomatoes and Garlic. Cover with 2 tablespoons Olive Oil, Sea Salt, and Pepper. Roast in the oven for 30-35 minutes.
You can also toast your bread during this time.
Remove from oven and place sheet pan contents into a large mixing bowl. Add in Basil, Oregano and your last tablespoon of Olive Oil. Toss contents together.
Begin assembling on your plate of choice. Burrata first and then layer your Tomato mixture over the top, being careful to not crush the tomatoes. Top off the plate with Salt and Pepper to taste. Enjoy!
