Strawberry Muffins
I’ve been practicing social distancing since Friday night. Just a few days in, and I will be honest, this is really hard for me. I love a schedule and I like to stay busy. When things are cancelled or moved around, it causes me more stress than it should. So, like every food lover, I have turned to baking and recipe development. I’ve got some great things coming your way, and just what you need to pass the time while we flatten the curve. Hang in there, and enjoy one of these yummy Strawberry Muffins!
Strawberry Muffins
Ingredients:
2 Cups White Whole Wheat Flour
3 Teaspoons of Baking Powder
1 Teaspoon of Salt
1 Cup of Brown Sugar
1 Large Egg
1 Teaspoon Vanilla
3 Tablespoons of Olive Oil
1 Cup of Almond Milk
2 Cups of Chopped Strawberries
1/2 Cup of Strawberry Jam
Cane Sugar to top
Instructions:
Preheat oven to 350 degrees.
Sift Flour, Salt and Baking Powder together into a large bowl. Once combined, stir in Brown Sugar.
In a separate bowl, combine Egg, Oil and Almond Milk.
Add wet ingredients to dry ingredients. Mix Well.
Add Strawberries and jam to mixture. Mix well.
Line muffin tin, spray and spoon mixture evenly into muffin liners. I use an ice cream scoop.
Bake for 20 minutes or until toothpick pulls clean.
Remove and turn off oven.
Top with a dash of Cane Sugar and put back in the oven (still off) for 2 minutes.
